Step 1
Heat oven to 350 degrees.
Step 2
Grease mini doughnut pan.
Step 3
In a mixing bowl, stir together coconut flour, salt, baking soda, nutmeg (optional).
Step 4
In separate bowl stir together the eggs, almond milk, coconut oil and vanilla.
Step 5
Sprinkle the konjac over the egg mixture and stir to dissolve.
Step 6
Add the egg mixture to the coconut flour mixture and stir till batter is smooth and thick.
Step 7
Add 1½-2 tsps. batter to donut well.
Step 8
Bake for 10-12 mins for cake doughnuts. Allow to cool slightly and dump out of pan. Coat with powdered swerve sweetener and serve immediately.
